
Here we are again at Caio Tres!!! This time, trying and introducing to you some very tempting new items in their menu.

How about some Crab Enchiladas with a creamy Chipotle Sauce or the Salmon Crouton with a Citrics Dressing Salad?
Or even better, their Grilled Portobello with Smoked Roast Beef? Wait wait…these are only some of the new entrees!!
You can find the Arrabiata Caio, a traditional pasta with the original touch of the Chef Oscar Galván, a blend of Morita and 4 other kinds of chiles…a sauce that will be hot in your mouth and soft in your stomack, what an interesting way of getting hot!!!
Another pasta is the Alfredo Coco…the original Alfredo with a touch of REAL Coconut!
If you like Shrimps, you can´t miss their Grilled Shrimps with spicy Pineapple Sauce or the Tempura Shrimps with Tamarindo Sauce (my favorite at Caio Tres)
Another new star item of their new menu is the Baked Chuck Lamb, with Garlic and Mint, accompanied with Mashed Potatoes and Beet/ Pepper confit.
For the fish lovers they have a wonderful Catch of the day with Raspberry Sauce, a must to try!
And of course, they have a great Paella, baked at the moment!!!

For the tasting we had the Salmon Crouton with a salad with Citrics Dressing, we paired it with a wine that my friend and business partner in Mujeres & Vino, the Sommeler Ariel Morales, from Vinos del Mundo and another great friend Santiago, both from Argentina.

Ariel brought a GREAT Chilenan white, CARMEN, 100% Gewürztraminer.
The result was very very nice, this wine is full of floral notes, very elegant, fresh, with a balanced acidity…it´s like breathing and smelling in a beautiful garden full or flowers very early in the morning, when the sun just came out!!
So imagine this pairing…the smoked flavors of the Salmon and the citrics dressing of the salad, were the perfect blend in the mouth, a beautiful combination!!!

Next dish was the Grilled Portobello with smoked Roast Beef, we paired it with a Red wine, a Sangiovese from PATER, Toscana, this was a pairing bursting with flavor!!!
The dish itself is already a very intense and interesting mix of flavors that exploded with the wine!

The wine has some very clear characteristics from the Terroir, it´s like being in the Vineyards after the rain…with aromas of wet soil, Leather, Cloves and Black fruits.

The Main dishes were The Catch of the Day with Raspberry Sauce -Fresh fish filet with a soft, sweet and sour sauce, beautifully presented and even better tasting!!! and the Tempura Shrimps with Tamarindo Sauce on Oriental. A great closing for the night !!
Whether you are a visitor or a local enjoying a special evening, visit Caio Tres, in Puerto Vallarta´s downtown at Morelos Street.

sounds delicious, we prefer a white wine with some residual sugar to pair with very spicy dishes…. thanks for the post Gina, when will we see your next one?

We had dinner at Caio Tres on Feb 27, 2010 and Mar 3, 2010 and the service and food was some of the best we have had in the last five years we have been visititing Puerto Vallarta. We will be back there again next year to enjoy some of the other things on your menu.
Note:
At our second visit I think you have an error in the bill. I did not catch it until we got home and were checking our peso charges and USD chareges on our credit card. I do not believe you were correct in the right price and I would like to make up the difference. I am not sure how much the difference is but when we split the bill on two credit cards it came out to only $13.00 USD for each half. We had three dinners, one salad, an order of flat bread and at least four drinks. Send me an email for the difference and I will send payment or I will pay it next year when we come bank.
